Pasta With Caramelized Onions, Bacon And Thyme - cooking recipe
Ingredients

8 oz bacon, chopped
2 cups button mushrooms, thinly sliced
3 None medium red onions, thinly sliced
3 cloves garlic, crushed
1 tbsp fresh thyme leaves
14 oz pasta twists
3 oz goat cheese, crumbled
Preparation

Cook bacon pieces in a large non-stick frying pan until crisp. Remove from pan and drain on paper towels.
Add mushrooms to same pan and cook for 5 mins, or until softened. Remove from pan.
Add onions, garlic and half the thyme to same pan and cook for 15 mins, or until soft and lightly browned.
Meanwhile, cook the pasta in a large pot of boiling salted water until just tender. Drain, reserving 1/2 cup of cooking water.
Toss the pasta with the cooking water, onion mixture and two-thirds each of the bacon, mushrooms and cheese. Season to taste with salt and black pepper.
Serve pasta sprinkled with remaining bacon, mushrooms, cheese and thyme.
