8 cups vegetable oil
4 1/2 lb potatoes, peeled, and cut into chunky french fries
1 tsp fennel seeds, crushed with a mortar and pestle
3 tsp sea salt flakes
Preparation

Preheat oil to 300\u00b0F. Fry potatoes for 15-20 mins, until just tender. Transfer to a lined baking tray and let cool slightly. Freeze for 1 hour.
Heat oil to 425\u00b0F. Gently lower cold potatoes into oil and cook for 20-25 mins, until crisp and golden. Transfer to a large bowl. Toss with crushed fennel seeds and sea salt flakes. Serve immediately.
