Homemade Cadbury Creme Eggs - cooking recipe

1/4 cup sugar
1/2 cup soft butter
1/2 tsp vanilla extract
3 3/4 cups powdered sugar
None None yellow or orange food coloring
10.5 oz dark chocolate, coarsely chopped
1 tbsp coconut oil
Preparation

To make simple syrup, bring sugar and 1/2 cup water to a boil. Cook until thickened and syrupy then let cool to room temperature.
To make the egg filling, in a bowl, combine 1/3 cup syrup with butter and vanilla extract. Beat until smooth then slowly add powdered sugar. Tint 1/3 of this mixture yellow with food coloring to make the \"yolk.\" Cover both mixtures and chill for at least 30 mins. Remove from refrigerator and form about 25 balls from the yellow mixture and 25 balls from the plain \"egg white\" mixture. Press white balls flat to form discs. Set a yellow ball in the center of each disc then fold the white around the yellow and re-shape into balls. Chill for 1 hour.
Meanwhile, melt chocolate with coconut oil in a double boiler. Remove from heat and let cool. Dip each egg in chocolate then transfer to a wire rack and chill for 30 mins. After chilling, you may need to repeat the dipping process to fully coat eggs with chocolate.
