Napoletana Pasta Sauce - cooking recipe

Ingredients
    1/3 cup olive oil
    1 None Spanish onion, finely chopped
    3 cloves garlic, minced
    2-3 sprigs fresh basil leaves
    1 tsp sea salt
    2 tbsp tomato puree
    3 1/3 lb ripe tomatoes, coarsely chopped
Preparation
    Heat 1/2 the oil in a large saucepan. Cook onion, garlic, basil and salt, stirring, until onion softens. Add tomato puree and cook, stirring, for 1 min. Add tomatoes. Bring to a boil then reduce heat and simmer, stirring occasionally, for 45 mins, or until sauce thickens. Stir in remaining oil and simmer for 5 mins.
