Pasta Shells With Zucchini And Lemon - cooking recipe

Ingredients
    10.5 oz large pasta shells
    5 tbsp olive oil
    3 None zucchini, thinly sliced
    3 None shallots, thinly sliced
    1 clove garlic, minced
    8.75 oz cherry tomatoes, halved
    1 None lemon, zested and juiced
    None None shaved Parmesan cheese, to serve
Preparation
    Cook pasta in boiling salted water until al dente. Drain.
    Meanwhile, heat 2 1/2 tbsp oil in a large frying pan over high heat. Cook zucchini for 5 mins, stirring, until soft and golden. Add shallots and garlic. Cook for 1 min. Add tomatoes, lemon zest, lemon juice and remaining oil. Season. Toss with pasta for 1 min over high heat to heat through.
    Serve topped with shaved Parmesan.
