Classic Basil Pesto - cooking recipe

Ingredients
    1/2 cup pine nuts, toasted
    1 bunch fresh basil leaves
    1/2 cup grated Italian cheese (Parmesan, Romano)
    2 cloves garlic, sliced
    2/3 cup extra-virgin olive oil
Preparation
    Preheat oven to 400\u00b0F. Spread pine nuts on a baking tray. Bake for 3-5 mins, until golden brown. Transfer to a plate and let cool slightly.
    In a food processor, process nuts, basil, cheese and garlic. Add half of the oil and pulse until well combined.
    Add remaining oil (through chute with motor running, if using a large processor) for a smooth consistency. Season to taste with salt and pepper.
    Transfer to an airtight container and pour a little more olive oil over the top to prevent discoloration. Store in the fridge.
