Lamb Chops With Fattoush - cooking recipe
Ingredients

2 tsp sesame seeds
2 tsp dried thyme leaves
1 1/2 tsp ground sumac
1 tbsp olive oil
12 None lamb chops
1 head baby Romaine lettuce, torn
1 small cucumber, halved lengthwise and sliced
1/2 cup torn parsley leaves, plus additional, to garnish
1/2 cup coarsely chopped mint leaves
1 None green pepper, seeded and chopped
2 None tomatoes, chopped
3 None green onions, sliced
1 None Lebanese flatbread or 2 pita bread
1 tbsp extra virgin olive oil
1 tbsp lemon juice
Preparation

Grind sesame seeds, thyme and 1 tsp of the sumac in a mortar and pestle until combined. Stir in the oil. Coat the lamb chops on both sides with the mixture. Set aside.
Combine lettuce, cucumber, herbs, pepper, tomatoes and onions in a large bowl.
Preheat the grill to medium-high. Grill bread for 1 min each side, until golden. Cool, then break into pieces.
Grill lamb chops for 2-3 mins each side depending on thickness. Set aside to rest.
Add bread to salad. Whisk oil and lemon juice, and drizzle over the salad. Season to taste. Toss to combine. Sprinkle with remaining 1/2 tsp sumac. Serve with lamb chops. Garnish with additional parsley leaves.
