Smoky Bacon And Fish Packets - cooking recipe

Ingredients
    2 None carrots, peeled and sliced
    4 slices bacon
    3/4 cup frozen peas, thawed
    2 None cod fillets (6 oz each)
    1 None lemon, juiced
    None None Boiled new potatoes, to serve (optional)
Preparation
    Preheat the oven to 350\u00b0F. Cook the carrots in boiling salted water for 5-8 mins until almost tender. Drain. Cook the bacon until crisp. Drain on paper towels.
    Place 2 large pieces of parchment paper on the work surface. Place the peas and carrots in the center of each. Top with the cod fillets; drizzle with lemon juice. Season with salt and freshly ground black pepper. Place 2 slices of bacon on top of each piece of fish.
    Fold up the paper to enclose the filling, forming 2 packets. Place the packets on a baking sheet.
    Bake for 15-20 mins until the fish is opaque and flakes easily. Serve with new potatoes, if desired.
