Seeded Cheese Shortbread Rounds - cooking recipe

1 cup plain flour, plus extra for dusting
3.5 oz Gruyere cheese, grated
1 oz Parmesan cheese, finely gated
1/2 cup butter, chilled and finely chopped
2-3 tbsp sesame seeds
2-3 tbsp poppy seeds
Preparation

Mix the flour and baking powder in a large bowl. Add both cheeses and the butter. Mix using an electric mixer with dough hook attachments. Turn out onto a lightly floured work surface and knead until smooth, adding a few drops of water if necessary. Wrap in plastic wrap and chill for 30 mins.
Divide the dough in half. On a lightly floured work surface, roll each piece into a thick rope. Sprinkle one on all sides with the sesame seeds and gently press to secure. Sprinkle the second with poppy seeds and gently press to secure. Chill for 1 hour.
Preheat oven to 400\u00b0F. Remove the ropes from the fridge and cut into 1/4 inch slices. Distribute the slices between 3-4 baking sheets lined with parchment paper. Bake for 8-10 mins until golden. Cool on wire racks.
