Pork And Soba Noodle Salad - cooking recipe

Ingredients
    1 lb pork tenderloin
    6 tbsp hoisin sauce
    1/2 lb soba noodles
    1 tbsp oil
    1 head baby cos or romaine lettuce, leaves separated, finely shredded
    1 None cucumber, halved, sliced
    1 None bunch radish, thinly sliced
    1/2 cup mint leaves, torn, plus extra to serve
    3 None spring onions, thinly sliced
    6 tbsp sweet chili sauce
    1 tsp sesame oil
Preparation
    Place pork in a medium bowl and coat with hoisin sauce. Cover and marinate for 15-30 minutes.
    Cook soba noodles in a large pot of boiling, salted water for 3-4 minutes, until just tender. Drain and refresh under cold running water. Set aside.
    Heat oil in a medium skillet on high. Cook pork 3-4 minutes each side. Reduce heat to low and cook pork for further 6-7 minutes each side, until golden and cook through. Transfer pork to a plate, cover and rest for 15 minutes.
    Meanwhile, in a large bowl, combine lettuce, cucumber, radish, mint, and onions. Slice pork and toss with salad and combined sweet chili sauce and sesame oil.
