Creamy Pork, Onion And Thyme Casserole - cooking recipe

6 tbsp olive oil
8 None boneless pork chops, cut into 2-3 smaller portions on a bias
2 1/4 lb onions, peeled and chopped
2 tbsp fresh thyme leaves, chopped
2 cups heavy cream
None None crusty bread, to serve
Preparation

Heat 2 tbsp olive oil in a large frying pan, season pork then sear over high heat until browned on both sides, working in batches if necessary. Set aside. Add remaining oil and onions and sweat for 10 mins, stirring frequently, until tender and golden. Season and set aside.
Preheat oven to 325\u00b0F. Layer onions, pork and chopped thyme in a shallow ovenproof baking dish. Cover with cream and set aside for 30 mins. Bake for 1 1/2-2 hours until pork and onions are very tender. Serve with crusty bread.
