Roasted Root Vegetables Over Arugula - cooking recipe

Ingredients
    1 lb beets, trimmed, peeled and cut into 1/2 inch cubes
    3/4 lb turnips, trimmed, peeled and cut into 1/2 inch cubes
    1 lb carrots, trimmed, peeled and cut into 1/2 inch cubes
    1 None red onion, cut into wedges
    4 cloves garlic, minced
    3 tbsp olive oil
    1/4 tsp crushed red pepper flakes
    5 oz baby arugula
Preparation
    Preheat oven to 425\u00b0F.
    Toss together all ingredients except arugula. Season. Arrange on a sheet tray and roast for 30 mins, until tender and golden brown. Place arugula on a serving platter. Spoon roasted vegetables on top.
