Green Bean Bundles - cooking recipe

Ingredients
    8 oz thin green beans, trimmed
    2 tsp butter
    2 tsp vegetable oil
    3 None scallions, cut into 6 strips, remainder chopped
    1/2 None red bell pepper, sliced
    1/2 None yellow bell pepper, sliced
    1 None small orange, zested and juiced
Preparation
    Blanch beans in boiling salted water for 3 mins. Drain.
    In a frying pan, heat butter and oil over medium heat. Cook 1 tbsp chopped scallion and peppers for 1 min. Add beans and 2 tbsp orange juice. Season. Cook for 2 mins. Divide mixture into 6 portions then tie each with a scallion strip. Drizzle with pan sauce and garnish with orange zest.
