Cherry And Mascarpone Kugelhopf Cakes - cooking recipe

Ingredients
    1 cup butter
    1/2 cup granulated sugar
    1 None lemon, zested and juiced
    3 None eggs
    1 2/3 cups all-purpose flour, sifted
    1/3 cup cornstarch, sifted
    3 tsp baking powder
    3 tbsp 2% milk
    1 1/2 cups powdered sugar
    3.5 oz mascarpone cheese
    1 tsp vanilla extract
    2 tbsp cherry jam
Preparation
    Preheat oven to 350\u00b0F. Grease and flour a kugelhopf pan with 6 - 7 oz recesses.
    Cream butter, sugar and lemon zest until light and fluffy. Whisk in eggs, 1 at a time. Combine flour, cornstarch, baking powder and a pinch of salt. Add to batter alternately with milk. Mix in 1 tbsp lemon juice. Transfer to prepared pan and bake for 25-30 mins. Let cool in pan then transfer to a wire rack to cool completely.
    Meanwhile, mix powdered sugar, 4 tbsp water and 4 tsp lemon juice until smooth. Ice cakes then set aside for 1 hour to set. Combine mascarpone, vanilla extract and cherry jam. Spoon into hollows of cakes. Serve immediately.
