Gluten-Free Date Cake With Caramel Sauce - cooking recipe

3 oz dried pitted dates, coarsely chopped
1 tsp baking soda
3/4 cup butter, softened
2/3 cup granulated sugar
1 1/2 tsp vanilla extract
2 None eggs
1/2 cup gluten-free self-rising flour
2/3 cup brown sugar
1/2 cup heavy cream
None None vanilla ice cream, to serve

Preheat oven to 350\u00b0F. Grease and line an 8 inch cake pan with parchment paper. Bring dates and 1 cup water to a boil. Add baking soda and remove from heat. Set aside for 10 mins.
Meanwhile, cream 1/3 cup butter, sugar and 1 tsp vanilla until pale and creamy. Beat in eggs, 1 at a time, until combined. Add flour and date mixture, beating until combined. Transfer to prepared pan, smooth surface and bake for 35-40 mins, until a skewer inserted in the center comes out clean. Let cool for 5 mins then turn out onto a serving plate.
For caramel sauce, combine remaining butter, brown sugar, heavy cream and remaining vanilla over low heat until well combined and smooth.
Cut cake into wedges. Drizzle with caramel sauce. Serve with ice cream.
