Couscous-Crusted Chicken With Corn Salsa - cooking recipe
Ingredients

1/2 cup couscous
1/2 tsp sweet paprika
4 None boneless skinless chicken breasts (6-7 oz each)
2 tbsp olive oil
1 cup frozen fava beans
1 cup frozen corn kernels
1 None carrot, diced
2 None celery stalks, diced
4 oz cherry tomatoes, halved
1 tbsp chopped flat leaf parsley
Preparation

Combine couscous and paprika in a shallow dish. Season. Add chicken and press to coat.
Heat half of the oil in a large skillet on medium heat. Cook chicken for 4 mins each side, until golden and cooked through. Let stand for 5 mins.
Meanwhile, cook fava beans in boiling, salted water for 3-5 mins, until tender. Drain and peel to remove outer white skins.
For the salsa, heat remaining oil in a saucepan on medium heat. Cook corn, carrot and celery, stirring occasionally, for 6-8 mins, until tender. Add fava beans and tomato. Season and simmer for 2 mins, until heated through. Sprinkle with parsley.
Slice chicken and serve with corn salsa.
