Rice Pudding With Fruit Compote - cooking recipe

Ingredients
    2 cups milk
    3/4 cup sugar
    2 tsp vanilla extract
    2 1/2 cups long-grain white rice
    1/4 cup heavy cream
    7 oz dried fruit, such as apricots, cherries, apples and raisins
    1 stick cinnamon
Preparation
    Preheat oven to 350\u00b0F. Lightly grease a 6 1/2 cup baking dish. Place milk, 1/2 cup of sugar, vanilla and rice in prepared dish. Bake, uncovered, for 45 mins or until milk is absorbed. Remove pudding from oven; skim off skin. Stir in cream.
    Meanwhile, put 1 cup cold water, the dried fruit, cinnamon stick and remaining sugar in a small saucepan. Bring to a boil. Reduce heat and simmer, uncovered, for 5 mins or until syrup thickens a little. Remove from heat. Let stand for 5 mins. Remove cinnamon stick.
    Serve rice pudding warm, topped with compote.
