Squash, Spinach And Ricotta Pizzas - cooking recipe

Ingredients
    1 lb winter squash, peeled, deseeded, cut into chunks
    1 clove garlic, finely sliced
    1 lb spinach
    1/2 lb low-fat ricotta
    4 None pitas
    2.5 oz mozzarella cheese, grated
    1/3 cup pine nuts
    None None salad, to serve
Preparation
    Place squash in a microwave-proof bag. Seal and microwave on HIGH (100%) for 3 mins, until tender.
    Meanwhile, lightly coat a large frying pan with oil. Cook garlic and spinach over high heat, stirring, for 2 mins, until wilted. Drain. Coarsely chop then combine with ricotta. Season.
    Preheat broiler. Broil pitas for 1 min, until crisp. Flip over and top with squash and spinach mixture. Arrange mozzarella and pine nuts over top and broil for 2 mins, until mozzarella has melted. Serve with salad.
