4 None flour tortillas
4 tbsp tomato paste
8 slices pancetta, chopped
8 None canned artichoke hearts, quartered
8 None baby mozzarella balls, sliced
1 cup grated mozzarella cheese (optional)
None None Fresh basil leaves, for garnish
None None Green salad, to serve
Preparation

Preheat the oven to 400\u00b0F. Line 2 large baking pans with parchment paper.
Place tortillas on prepared pans. Spread evenly with tomato paste. Arrange pancetta, artichokes and mozzarella slices on tortillas. Sprinkle with grated mozzarella, if desired.
Bake for 5-10 mins, until cheese has melted and tortillas are crisp. Sprinkle with basil leaves and serve with green salad.
