Baked Chicken With Honey-Ginger Glaze And Sweet Potatoes - cooking recipe

2 tbsp fresh ginger, finely grated
1/4 cup honey
2 tbsp brown sugar
2 cloves garlic, minced
8 None chicken thighs
1 lb sweet potato, peeled, halved or quartered lengthwise
1 None lemon, thinly sliced
1 None large green chili, sliced (optional)
Preparation

Preheat oven to 350\u00b0F. Line a large rimmed baking tray with parchment paper. Combine ginger, honey, sugar and garlic. Coat chicken in mixture then roll up loosely and arrange on prepared tray along with sweet potatoes and lemon. Drizzle with any remaining ginger mixture. Season. Bake, uncovered, for about 30 mins, or until chicken and sweet potatoes are cooked through and browned. Add chili, if using, around 20 min mark.
