Cornflake Breaded Fish With Chili Mayo - cooking recipe

Ingredients
    1 1/2 lb winter squash, unpeeled, cut into thin wedges
    3 None large potatoes, peeled, cut into 3/4 inch pieces
    3 tsp vegetable or olive oil
    1 1/2 lb firm boneless white fish fillets, cut lengthwise into 3 pieces
    3 None egg whites, lightly whisked
    2 cups cornflakes, crumbled
    7 oz green beans
    1/4 cup sweet chili sauce
    1/3 cup low-fat mayonnaise
Preparation
    Preheat oven to 475\u00b0F. Line 2 large baking trays with parchment paper. Toss squash and potato with oil. Spread over 1 prepared tray and bake for 18 mins, or until golden brown and tender.
    Meanwhile, dip fish fillets in egg white then coat in cornflake crumbs. Place on remaining prepared tray and bake for 12 mins, or until golden brown and cooked to your liking.
    Cook green beans in boiling salted water for 2 mins, or until just tender. Drain then season to taste. Whisk together sweet chili sauce and mayonnaise. Serve fish with vegetables and sweet chili mayonnaise.
