Shrimp And Toast Croquettes - cooking recipe

Ingredients
    12 slices white bread
    24 None peeled and deveined shrimp
    3 None green onions, finely chopped
    2 tsp finely grated fresh ginger
    1 tbsp chopped cilantro
    1 None egg white
    1 tsp cornstarch
    1 tsp soy sauce
    2 tsp sesame oil
    1/2 cup sesame seeds
    3 cups vegetable oil, to deep-fry
    None None plum sauce, to serve
Preparation
    Using a 2 inch cutter, cut bread into 24 rounds. Using a food processor blitz shrimp, green onions, ginger, cilantro, egg white, cornstarch, soy sauce and sesame oil until almost smooth. Season with salt and white pepper.
    Place sesame seeds on a plate. Spread one side of each bread piece with prawn mixture. Dip bread, prawn-side down, in seeds to coat.
    Heat oil in a large heavy-based saucepan (oil is ready when a cube of bread crisps quickly without absorbing oil). Deep-fry, in batches, for 1-2 mins or until golden and cooked through. Using a slotted spoon, transfer to paper towels to drain. Serve with plum sauce.
