Endive, Lychee And Papaya Salad With Passionfruit Dressing - cooking recipe

Ingredients
    3 None Belgian endive
    1 medium papaya, coarsely chopped
    1/2 cup loosely packed fresh mint leaves
    1/2 cup loosely packed fresh Thai basil leaves
    2 None fresh long red chili peppers, thinly sliced
    5 oz curly endive
    1 can (20 oz) lychees, drained
    None None FOR THE PASSIONFRUIT DRESSING
    1/3 cup passionfruit pulp
    1/4 cup lemon juice
    1/4 cup light olive oil
Preparation
    Trim bottoms from endive; slice leaves thickly lengthwise.
    For the passionfruit dressing, whisk all ingredients in a medium bowl. Season.
    Place endive in large bowl with remaining ingredients and dressing; toss gently to combine.
