Butternut Squash Casserole - cooking recipe
Ingredients

2 cloves garlic, finely chopped
1/2 tsp fresh rosemary leaves, finely chopped
2 tbsp extra virgin olive oil
2 1/4 lb butternut squash, peeled, deseeded, chopped
3.5 oz pumpkin seeds, coarsely chopped
1.5 oz pecorino or Parmesan cheese, grated
2 tbsp fresh parsley leaves, finely chopped
Preparation

Preheat oven to 425\u00b0F.
Toss garlic, rosemary and oil with squash. Season. Transfer to a baking dish, cover with foil and bake for 30 mins. Remove foil and bake for another 25 mins. Sprinkle with pumpkin seeds and cheese. Bake for another 10 mins. Sprinkle with parsley and serve.
