Warm Salmon And Pasta Salad - cooking recipe
Ingredients

3/4 lb fettuccine
2 None small oranges, 1 juiced, 1 peeled, pith removed, chopped
2 tsp lemon juice
1/4 cup vegetable stock
2 tsp Dijon mustard
3 tsp sugar
1/2 cup canola oil
4 sprigs fresh dill, finely chopped
2 None small heads radicchio, cut into thin strips
1/2 lb salmon fillet, skin removed, cut into 1 x 1 inch cubes
1 tbsp sunflower oil
Preparation

Cook the pasta in boiling salted water according to the package directions .
Place the orange and lemon juice, stock, mustard, sugar and canola oil in a bowl and mix with a hand blender. Season with salt and black pepper and stir in the dill.
Drain the pasta and toss with the radicchio, orange chunks and 2 tbsp dressing. Season with salt and black pepper. Divide between 4 serving bowls.
Season the salmon with salt and black pepper. Heat the oil in a non-stick frying pan and cook the salmon for 2-3 mins on each side. Arrange on top of the pasta and drizzle with the remaining dressing.
