Lamb And Couscous Croquettes In Pita Bread - cooking recipe
Ingredients

2 oz couscous
1 lb ground lamb
1/3 cup currants
1 None egg, lightly whisked
1/4 cup fresh mint, chopped + extra small leaves, to serve
1/2 lb large cherry tomatoes, quartered
1 None red onion, finely chopped
4 None pitas, warmed
1/2 cup hummus, to serve
Preparation

Cover couscous with 1/2 cup boiling water. Set aside for 5 mins, covered, or until liquid is absorbed. Using a fork, fluff and separate grains. Add ground lamb, currants, egg and 2 tbsp mint. Stir to combine. Season then shape into 8 croquettes. Working in batches, heat a frying pan over medium heat, lightly coat with oil then cook croquettes for 10 mins, or until browned and cooked through.
Combine tomatoes, onion and remaining mint. Season then distribute between pitas. Add croquettes, hummus and reserved mint leaves. Serve.
