Cauliflower Au Gratin - cooking recipe
Ingredients

2 1/4 lb cauliflower, trimmed, cut into large florets
1/2 tbsp cornstarch
1 2/3 cups skim milk
4.5 oz aged cheese, grated
1 None egg yolk
1 pinch grated nutmeg
1 pinch cayenne pepper
None None salad, to serve
Preparation

Preheat broiler.
Cook cauliflower in boiling, salted water for 5 mins, until just tender. Drain. Transfer to a large baking dish.
Whisk together cornstarch and 1/4 cup milk. Bring remaining milk to a boil. Whisk in cornstarch mixture and bring to a boil again. Cook for 1 min, stirring, until sauce thickens. Add 3 oz cheese then add egg yolk, nutmeg and cayenne. Stir until cheese melts and sauce is smooth. Pour over cauliflower then sprinkle with remaining cheese. Broil until bubbling and golden brown. Serve with salad.
