Mashed Green Chile Herb Sweet Potatoes - cooking recipe

Ingredients
    1 3/4 None sweet potatoes, washed
    1 (4.5 oz) can chopped green chiles, drained
    1/4 cup minced scallion
    2 tsp minced fresh thyme
    1/2 - 1 tsp chili powder (optional)
Preparation
    Place potatoes in a microwave-safe dish and prick several times with a knife. Cover with a dampened paper towel and microwave on HIGH for 12-15 mins, turning 3 times, or until tender. Let cool for 15 mins then peel and puree.
    Transfer mashed potatoes to a mixing bowl and stir in remaining ingredients. Season.
