Chicken Tacos With Guacamole - cooking recipe

2 ripe avocados, stoned, flesh removed
Juice None 1 lime
1 small onion, peeled and finely chopped
2 None garlic cloves, crushed
1 None red chili, sliced into rings
4 None taco shells
1 tbsp olive oil
1 lb chicken breast, cut into bite-size pieces
1 None red pepper, deseeded and chopped
1 None mango, peeled, stoned and chopped
1 oz parsley, chopped, reserving a few leaves to granish
4 None curly lettuce leaves, torn
Preparation

Preheat the oven to 350\u00b0F. For the guacamole, place the avocado in a bowl with the lime juice, onion and garlic. Blend until smooth using a stick blender. Stir the chili through the mixture. Season to taste with salt and freshly ground black pepper.
Bake the taco shells for 3-4 mins.
Heat the oil in a frying pan, add the chicken and stir-fry for 5 mins. Add the pepper, mango and chopped parsley and cook for another 3 mins. Season to taste with salt and freshly ground black pepper.
Fill the tacos with the chicken mixture and the lettuce. Garnish with the extra parsley leaves. Serve with the guacamole.
