Goat Cheese, Pea And Mint Salad - cooking recipe

1 tsp wholegrain mustard
1 tbsp lemon juice
1 tbsp honey
1 tbsp olive oil
None None For the Salad
3 oz fresh peas, cooked
5.25 oz small, pale celery stalks, thinly sliced
3 tbsp young celery leaves
1 head frisee lettuce, trimmed
1 head treviso or radicchio, leaves separated
3 None medium red radishes, thinly sliced
1 None medium red apple, thinly sliced
3 tbsp fresh mint leaves
7.75 oz goat cheese, sliced
Preparation

To make the honey mustard dressing, whisk together all ingredients. Set aside.
Toss together all ingredients for salad. Just before serving, drizzle honey mustard dressing over salad and toss to combine.
