Crispy Fish With Chili Lime Mayonnaise - cooking recipe

None None Vegetable oil, for deep-frying
3/4 cup mayonnaise
1 tbsp lime juice
1 clove garlic, crushed
1 small fresh red chili pepper, seeded and finely chopped
3/4 cup self-rising flour
1/2 tsp salt
1 cup chilled club soda
1 lb whiting or cod fillets, bones removed, sliced into thin diagonal strips
None None Lemon or lime wedges, to serve
Preparation

Heat the oil to 350\u00b0F in a deep-fat fryer or large skillet. Combine the mayonnaise, lime juice, garlic and chili pepper in a small bowl. Refrigerate until ready to serve.
Place flour and salt in a medium bowl. Whisk in the club soda until combined. Dip fish in batter in batches and deep-fry until lightly browned and cooked through. Drain on a wire rack.
Serve fish with mayonnaise mixture and lemon or lime wedges.
