Beef And Prosciutto Skewers - cooking recipe

Ingredients
    8 slices prosciutto, each cut lengthwise into 3 equal strips
    1 1/3 lbs beef sirloin steak, cubed
    1 None lemon, cut into 8 wedges
    1 tbsp olive oil
    1 tbsp butter
    1 tsp finely grated lemon peel
    2 tbsp lemon juice
    2 tsp finely chopped capers
    2 tbsp chopped fresh rosemary
    2 tbsp chopped fresh flat-leaf parsley
    None None Mashed potato and steamed green beans, to serve
Preparation
    Thread prosciutto and beef onto 8 skewers, threading prosciutto in a zigzag around beef cubes. Thread a lemon wedge onto end of each skewer.
    Heat oil and butter in a large skillet on medium-high heat. Cook skewers, turning, for 5 mins for medium-rare, or until cooked to desired doneness.
    Add lemon peel and juice, capers and rosemary to pan. Cook, turning, for a further 2 mins, or until sauce thickens slightly.
    Remove pan from heat. Transfer skewers to a plate. Cover with foil; let stand for 5 mins. Stir parsley into sauce.
    To serve, spoon mashed potatoes onto plates. Top with green beans and skewers. Drizzle with sauce and serve at once.
