Double Chocolate Rum Raisin Cheesecakes - cooking recipe

Ingredients

    1/3 cup dark rum
    1 cup raisins, roughly chopped
    None None DOUBLE CHOCOLATE CHEESECAKE
    12 tbsp butter, chopped
    12.5 oz dark chocolate, 3.5 oz chopped, 9 oz melted
    1 cup granulated sugar
    1 cup all-purpose flour, plus 2 tbsp, sifted
    2 tbsp cocoa powder, sifted, plus extra for dusting
    2 None large egg yolks, plus 3 large eggs
    1 lb cream cheese, softened
    1/2 cup granulated sugar
Preparation
    For the rum raisins, combine rum and raisins in a small bowl. Cover and let stand for 3 hours.
    Preheat oven to 350\u00b0F. Grease and line an 8x12 inch baking pan with parchment paper, extending paper 2 inches above long sides.
    Stir butter, chopped chocolate, sugar and 2/3 cup water in a saucepan over low heat until smooth. Remove from heat. Stir in flour and cocoa powder then egg yolks. Transfer to prepared pan and bake for 15 mins. Let cool in pan.
    Meanwhile, beat cream cheese and sugar until smooth. Beat in eggs, 1 at a time. Stir in melted chocolate then rum and raisin mixture. Pour over base and bake for 45 mins, or until just set. Let cool in oven with door ajar. Chill for 3 hours or overnight. Cut into squares and dust with cocoa powder.
