Spiced Chai Latte - cooking recipe

Ingredients
    2 None cardamom pods
    1 None star anise
    2 None cloves
    25 g fresh root ginger, peeled and sliced
    1/2 tsp ground cinnamon, plus extra for dusting
    6 tbsp loose Assam tea
    400 ml semi-skimmed milk
    2 tbsp runny honey
Preparation
    Using a mortar and pestle, crush the cardamom pods, star anise and cloves. Place in a saucepan with the ginger, cinnamon and a pinch of freshly ground black pepper and add 2 cups boiling water. Cover and allow to steep for 30 mins.
    Bring the spiced water to a boil again, add the tea and simmer for 5 mins. Strain through a tea strainer. Add the milk and honey and froth with a milk frother. Pour into cups and dust with cinnamon.
