Grilled Lamb With Spicy Peach Salsa - cooking recipe

2 lb lamb loin
1 None red onion, finely chopped
2 None peaches, pitted, finely chopped
2 tbsp fresh flat-leaf parsley leaves, finely chopped
1 None fresh long red chili, finely chopped
1 tbsp malt vinegar
None None spinach leaves, to serve
Preparation

Preheat broiler or grill. Cook lamb to your liking. Let rest, covered, for 10 mins then slice thinly.
Meanwhile, gently toss remaining ingredients together.
Serve lamb with salsa and spinach.
