Aromatic Meatball Pilaf - cooking recipe

Ingredients
    2 tbsp vegetable or olive oil
    1 lb meatballs
    1 None medium Spanish onion, finely chopped
    2 cloves garlic, minced
    2 tsp ground turmeric
    1 tbsp ground cumin
    4 None cardamom pods, bruised
    2 (16 oz) packets microwave basmati rice
    1/2 cup chicken stock
    9 oz frozen mixed vegetables
    1/2 cup chopped fresh cilantro leaves
    1/3 cup plain yogurt, to serve
Preparation
    Heat 1 tbsp oil in a large frying pan over medium heat. Cook meatballs, turning, for 3-4 mins, or until browned. Remove from pan.
    Add remaining oil to pan. Cook onion, garlic and spices for 1-2 mins, or until fragrant. Add rice, stock, vegetables and meatballs. Simmer, uncovered, for 5-6 mins, or until stock is almost absorbed and meatballs are cooked through. Stir in cilantro. Serve with yogurt.
