Sweet Potato And Chili Hot Pot - cooking recipe

Ingredients
    1 tbsp oil
    1 None onion, halved, sliced
    3 cloves garlic, finely chopped
    1 None bird's eye chili, finely chopped
    2 tbsp Moroccan seasoning mix
    1 tsp smoked paprika
    1 1/2 lb sweet potato, peeled, chopped
    1 (28 oz) can four-bean mix, drained
    1 (13.5 oz) can chopped tomatoes
    None None fresh cilantro leaves, to serve
Preparation
    Heat oil in a saucepan over medium heat. Cook onion for 3 mins, stirring, until soft. Add garlic and chili. Cook for 1 min. Add seasoning mix and paprika. Cook for 1 min, until fragrant.
    Add sweet potato, beans, tomatoes and 1 cup water. Cover and simmer for 20 mins, until sweet potato is tender. Season. Serve topped with fresh cilantro.
