Caramelized Pear Sabayon - cooking recipe
Ingredients

1 1/2 tbsp butter
2 None pears, peeled, cored and sliced
1/4 cup, plus 1 tbsp sugar
2-3 tbsp apple juice
1/3 cup sliced almonds
3 None medium egg yolks
2 tbsp white wine
Preparation

Melt the butter in a pan, then add the sliced pears and cook for 1-2 mins. Sprinkle a tablespoon of sugar over the pears and cook until the sugar has dissolved. The sugar will then begin to caramelize. Pour in the apple juice and bring to a boil briefly. Divide the pear mixture into four dessert bowls.
Toast the almonds in a dry pan until they are light brown.
For the sabayon, in a heat-proof bowl, mix together egg yolks, 1/4 cup sugar and white wine. Place bowl over a pan of simmering water, and whisk constantly until the mixture has doubled in size. Cover the pears with the mixture, sprinkle with the toasted almonds and serve immediately.
