Ingredients

2 None lychees, peeled and deseeded
1/2 None lime, cut into wedges
8 sprigs fresh mint, plus extra, to decorate
3 tbsp white rum
1 tbsp lychee liqueur
1/4 cup fresh pineapple juice
1 tbsp simple syrup
None None ice cubes
Preparation

Muddle the lychees, lime and mint in a cocktail shaker.
Add the rum, lychee liqueur, pineapple juice, simple syrup and ice cubes and shake to combine.
Serve in a tall glass, decorated with a sprig of mint.
