Portuguese Bolo De Bolacha (Layered Cookies And Cream) - cooking recipe

Ingredients
    397 g sweetened condensed milk
    200 g whipping cream
    200 g digestive biscuits
    75 ml espresso
    500 g cherries
Preparation
    For the cream, whisk the condensed milk and heavy cream in a bowl until thick and creamy.
    Place a layer of cookies on the bottom of a 7 x 9 inch baking dish and brush with 1/3 of the espresso. Spread 1/5 of the cream on top, add 1/2 the cherries and finish with 1/5 of the cream. Repeat this process and finish with a layer of cookies brushed with espresso and the last 1/5 of the cream. Crumble the remaining cookies and sprinkle on top.
    Chill for at least 6 hours. Before serving, remove from the the fridge for 30 mins and cut into about 8 pieces.
