Mexican Puffs - cooking recipe

Ingredients
    1 None avocado, diced
    1 None tomato, seeded and diced
    1/3 cup grated Cheddar cheese
    2 sheets frozen puff pastry, thawed
    1 None egg, lightly beaten
    1 cup yogurt
    1 bunch chives, finely chopped
Preparation
    Preheat the oven to 425\u00b0F. Line two baking pans with parchment paper.
    Combine avocado, tomato and cheese in a medium bowl and season to taste. Cut each sheet of pastry into 4 squares. Divide avocado mixture among squares, placing it down the side of the square. Brush edges with water. Fold to form rectangles. Press edges to seal. Place rectangles on prepared pans.
    Brush pastry with egg. With a small knife, cut three shallow slashes across top of pastry. Bake for 10 mins, until puffed and golden.
    Meanwhile, combine yogurt and chives in a bowl. Season to taste. Serve puffs with yogurt and chive dip.
