Green Curry With Fish - cooking recipe
Ingredients

2 tbsp vegetable oil
1 None large red onion, cut into wedges
1/3 cup green curry paste
1 cup coconut cream + 2 tbsp
1 2/3 cups coconut milk
3 None medium tomatoes, coarsely chopped
1 1/2 lb firm white boneless fish fillets, cut into 3/4 inch pieces
1 cup fresh cilantro, coarsely chopped
None None cooked jasmine rice, to serve
Preparation

Heat oil in a large frying pan over medium heat, add onion and cook for 2-3 mins, or until softened. Add curry paste and cook for 1 min, or until fragrant. Add coconut cream and milk. Bring to a boil, add tomato and fish. Reduce heat and simmer, covered, for 8-10 mins, or until fish is just cooked. Remove from heat and add cilantro. Season. Serve with rice.
