Nasi Goreng - cooking recipe

Ingredients
    2 tbsp peanut oil
    3 None eggs, lightly beaten
    2 None onions, chopped
    1 clove garlic, crushed
    1 None fresh chili pepper, seeded and sliced
    1/2 tsp dry shrimp paste (belacan)
    8 oz beef or pork tenderloin, diced
    1 small boneless skinless chicken breast, diced
    8 oz medium shrimp, peeled and deveined
    4 cups cold cooked rice
    2 tbsp light soy sauce
    1 small cucumber, unpeeled, diced, to serve
    None None Crisp fried onion, to serve
Preparation
    Heat 1 tbsp of the oil in a large skillet or wok on medium heat. Add half of egg and spread out to make a thin omelet. Cook for 1 min each side, until set. Repeat with remaining egg. Roll up together, then cut into thin strips. Set aside.
    Heat remaining oil in same pan. Stir-fry onion, garlic, chili pepper and shrimp paste for 3 mins. Add beef or pork and cook for another 3 mins, until brown. Stir in chicken and shrimp and cook for another 2-3 mins.
    Stir in rice and heat through. Add soy sauce and omelet strips and toss to combine. Serve with cucumber and onion.
