Salmon With Roast Potatoes And Salsa Verde - cooking recipe

Ingredients
    2 1/4 lb potatoes, halved
    2/3 cup fresh flat-leaf parsley leaves
    1 clove garlic, minced
    1 1/2 tbsp lemon juice
    2 tsp capers, rinsed
    4 None salmon fillets
Preparation
    Preheat oven to 400\u00b0F. Generously grease a large baking dish with olive oil. Heat dish for 10 mins in oven.
    Add potatoes to heated dish and roast for 20-30 mins, until golden brown and tender, turning occasionally.
    Meanwhile, to make the salsa verde, combine parsley, garlic, lemon juice, capers and 1 tbsp water in a food processor. Pulse until parsley is finely chopped. Transfer to a serving bowl.
    Oil a frying pan and place over medium-high heat. Cook salmon until browned on both sides and cooked to your liking. Serve salmon on a bed of roasted potatoes, topped with salsa verde.
