Cheesy Pesto Polenta - cooking recipe
Ingredients

3 cups milk
2 cups chicken stock
2 1/2 cups polenta
1/4 cup finely grated Parmesan cheese, plus additional, to serve
1/2 cup prepared pesto
1 cup milk
Preparation

Bring 3 cups milk and stock to a boil in a large saucepan. Gradually add polenta, stirring constantly.
Reduce heat to low; simmer, stirring, 10 mins or until polenta thickens. Stir in additional 1 cup milk, pesto and Parmesan cheese until cheese melts. Serve topped with additional Parmesan cheese, if desired.
