Apple And Rhubarb Crumble - cooking recipe

1/2 cup flour
6 tbsp (3/4 stick) cold butter, chopped
1/3 cup packed light brown sugar
1/4 cup sweetened flaked coconut
1/4 cup rolled oats
1/2 tsp ground cinnamon
4 None Granny smith apples, peeled, cored and cut into chunks
12 oz rhubarb, leaves removed, cut into 1 inch pieces
1/3 cup granulated sugar
None None Ice cream or whipped cream, to serve
Preparation

Preheat the oven to 350\u00b0F. Lightly grease a 2-quart baking dish. For the topping, sift the flour into a bowl. Rub in the butter until it resembles fine breadcrumbs. Stir in the brown sugar, coconut and oats. Set aside.
For the filling, place the apples and 1/4 cup water in a medium saucepan on medium-high heat. Bring to a boil. Reduce heat to low; cover and simmer for 4-5 mins until apples are almost tender. Add the rhubarb and granulated sugar. Simmer, stirring, for 2-3 mins until rhubarb is just tender. Drain off the excess liquid. Spoon the fruit mixture into prepared dish. Sprinkle with the topping.
Bake for 15-20 mins until golden and bubbly. Spoon into serving dishes and serve warm with ice cream or whipped cream.
