Creamy Spiced Salmon Rigatoni - cooking recipe

Ingredients
    1 lb rigatoni pasta
    1 tbsp olive oil
    1 clove garlic, peeled and crushed
    15 oz can chopped tomatoes
    2/3 lb full-fat mozzarella cheese
    1/2 tsp sugar
    2-3 tsp red chili paste
    3 tbsp butter
    1 None onion, peeled and finely chopped
    2 small leeks, trimmed and chopped
    2 None carrots, peeled and cut into thin strips
    1 lb salmon fillet, cubed
    1/4 lb Parmesan cheese, shaved
    4 None fresh basil sprigs, to garnish
Preparation
    Cook the pasta in a large pan of salted boiling water according to the package instructions. Meanwhile, heat the oil in a pan and fry the garlic for 2-3 mins. Add the chopped tomatoes and cover and simmer for 10 mins. Stir in the mozzarella cheese and stir until just melted. Add the sugar and chili paste and season with salt and freshly ground black pepper.
    Melt the butter in a large, deep pan and fry the onion, leeks and carrots for 8-10 mins until soft. Add the salmon and fry for 2-3 mins until just cooked.
    Drain the pasta and add to the pan with the spiced tomato sauce. Toss well to mix and simmer for 1-2 mins. Serve in warmed bowls topped with the salmon, vegetables and Parmesan shavings. Garnish with basil sprigs.
