Ingredients
    3 cups vegetable juice (V-8)
    3 cups water
    2 cups sliced carrots
    2 cups green beans (frozen or fresh)
    2 cups diced celery
    1 cup diced potato
    1/2 cup chopped onion
    1 teaspoon salt
    1/2 teaspoon pepper
Preparation
    Stir together all ingredients in a large pot and bring to a boil.
    Reduce heat to simmer and cook until all veggies are tender, about an hour.
