Quinoa Salad With Lemon And Mint - cooking recipe

Ingredients
    1 cup quinoa
    1/2 cup finely chopped parsley
    1/4 cup finely chopped mint
    1/3 cup sliced scallion
    1/4 cup raisins
    2 tablespoons pine nuts
    1 clove garlic, minced
    2 teaspoons finely chopped lemon zest
    2 tablespoons fresh lemon juice
    1/4 teaspoon salt
    1/8 teaspoon pepper
    1 tablespoon olive oil
Preparation
    In a medium saucepan, bring 2 cups water to boil. Add quinoa and return to boil.
    Reduce heat to low, cover and cook until all of the water is absorbed, 15 minutes.
    Cool.
    Place quinoa in a medium bowl and add remaining ingredients. Toss well with a fork to combine.
    Cover and refrigerate at least 2 hours before serving.
