Gourmet Lamb Chops - cooking recipe

3/4 cup cheese, grated (parmesan or romano)
1/2 cup fine breadcrumbs
1/2 teaspoon salt
6 thin shoulder lamb chops
1 whole egg (or 2 egg yolks, beaten)
Preparation

Mix together the cheese, bread crumbs, and salt. Using a pastry brush or spoon, coat the chops on both sides with egg, and dip in the cheese mixture. Arrange on a baking sheet and broil slowly, turning once. When the cheese is melted and crumbs brown, meat should be tender.
